Pork Tenderloin Farro Bowls

We love a good bowl night chez Neudeck, but the protein is almost always chicken or salmon. Pork tenderloin is usually its own thing. Well not this time!

Cook a seasoned pork tenderloin (I’ve found 385 for 25-28 min to be good) with whatever rub you like. My beau won’t give away all his secrets, but I know there’s usually some herbs de Provence in there. While that’s in the oven, make some quick cooking farro. For toppings, I set out radishes, roasted broccoli/cauliflower (with garlic powder, cracked pepper, salt), truffled sunflower oil, and Sir Kensington’s garlic everything sauce.

So simple, so satisfying. Also, it feels relatively clean and I shocked myself that I felt zero need for cheese, a true first.
